Title: Rhubarb Upside Down Baking Mix Cake [America]

1/2 | c | Sugar |
1/2 | ts | Cinnamon |
1 1/2 | tb | Tapioca |
4 | c | Rhubarb, cut in 1" pieces |
2 | c | Baking Mix |
4 | tb | Sugar |
1 | c | Milk |
1 | Egg |
Mix sugar, cinnamon and tapioca (or use 1 tablespoon cornstarch) together. Toss with the diced rhubarb and pour into a greased 8 by 12 inch glass baking dish. Preheat the oven to 350 F. Mix the baking mix, milk, sugar and egg together thoroughly and spread it on the rhubarb mixture. Bake for 45 minutes or until a toothpick inserted into the biscuit top comes out clean.
