Title: Smoky Chipotle-Glazed Apple Relish

1/2 | c | White vinegar |
2 | tb | Sugar |
1/2 | c | Fresh orange juice |
2 | tb | Molasses |
3 | Chipotle peppers, canned | |
6 | Granny Smith apples, halved | |
And cored | ||
2 | tb | Vegetable oil |
1/4 | c | Cilantro, chopped |
1/2 | Red onion, thinly sliced | |
6 | tb | Lime juice (about 3 limes) |
1 | ts | Cinnamon |
1. In a medium-size saute pan, combine vinegar and sugar, and bring to a boil. Simmer until reduced in volume by half, about 10 minutes. Add orange juice, and again simmer until reduced by about half, about another 10 minutes. Remove from heat, then add molasses and chipotle peppers, and salt and pepper to taste, and mix well. 2. Coat the apple halves lightly with oil, and place on the grill, cut side down, over a medium fire. Cook until apples have light grill marks and the cut sides are just golden, about 3 minutes. Flip over, and continue to cook for 4 more minutes, painting the exposed side of the apples liberally with glaze during the final minute of cooking. Remove from the grill, cool slightly and chop coarsely. 3. In a large bowl, combine the grilled apples, cilantro, onion, lime juice, cinnamon and the remaining chipotle glaze. Mix well. This relish will keep for up to 2 weeks, covered and refrigerated.
