15 | Whole peppercorn; crushed | |
20 | g | Castor sugar |
100 | g | Cherries; stoned |
100 | g | Raspberries |
100 | g | Strawberrries |
Name: "Peppered Red Berries Soup"
Grate the zest of the lime. Squeeze the lime. Put wine, water, sugar, pepper and zest in a saucepan, bring to a boil, remove from heat, add juice of lime, let cool, pour on berries, chill 6 hours at least. Serve with a good wine from Red Pinot or Gamay grapes slightly chilled (10 C).
