Title: Spice Delight Cake with Seafoam Icing

1/2 | c | Butter; softened |
1 1/3 | c | Sugar |
2 | Eggs,large | |
1 | ts | Vanilla extract |
2 | c | Cake flour; sifted |
1 | ts | Cinnamon,ground |
1/2 | ts | Nutmeg,ground |
1/4 | ts | Allspice,ground |
2 1/2 | ts | Baking powder,double-acting |
3/4 | ts | Salt |
2/3 | c | Milk,plus 1/4 cup |
Seafoam icing: | ||
2 | Egg whites,large | |
1 1/2 | c | Brown sugar; packed |
5 | tb | -water,cold |
1/8 | ts | Salt |
1/8 | ts | Cream of tartar |
1 | ts | Vanilla extract |
Recipe by: Jo Anne Merrill 1-For cake: cream butter (or margarine) and gradually add sugar. Add eggs, 1 at a time, beating well after each. Add vanilla. Sift dry ingredients together; add to batter alternately with the milk. Divide batter in half. Into one half, add the spices and mix well. 2-Grease and flour two 8-inch cake pans. Pour batter into one pan and spice batter into the other. Bake in preheated 350 degree oven 25-30 minutes. Cool and then frost.
Seafoam Icing:
Put all icing ingredients except vanilla into the top of a double boiler; place over boiling water. Beat with an electric mixer set on low speed until blended, then beat on high until mixture stands in peaks. Remove from heat and add vanilla; beat about 5 minutes until of spreading consistency. This cake recipe was a third place winner at the Del Mar county fair. Jo Anne Merrill
