Title: Spiced Chunky Applesauce

5 | lb | Golden delicious apples |
1 1/2 | c | Granulated sugar |
1 | c | Apple cider |
2 | tb | Lemon juice |
1 | tb | Finely grated lemon rind |
1/2 | ts | Cinnamon |
1/2 | ts | Allspice |
1/2 | ts | Ginger pinch nutmeg |
1/4 | c | Crystallized ginger, minced |
Peel, core and cut apples into 1 inch chunks. In nonaluminum saucepan,combine sugar and cider; cook, stirring, over medium high heat until boiling and sugar has dissolved. Add apples and return to simmer;partially cover and cook over medium low heat for 1 hour or until softened, stirring often. Stir in lemon juice and rind, cinnamon,allspice, ground ginger, nutmeg, and crystallized ginger. Cook for 15 minutes or until thickened and chunky. Let cool. Can be refrigerated for up to 1 week.
