Title: Spicy Apricot Cake

2 | c | Sugar |
1 | c | Vegetable oil |
3 | Eggs | |
2 | (4 oz) jars apricot baby food | |
2 | c | Self-rising flour * |
1 | ts | Ground cinnamon |
1/3 | ts | Ground cloves |
Sifted powdered sugar for garnish |
Preheat oven to 350ø F. Grease and flour a tube or bundt pan. Beat sugar and oil together. Add eggs, one at a time. Add baby food, one jar at a time. Combine half the flour with cinnamon and cloves and add to mixture, then add remaining flour. Pour into prepared pan and bake 1 hour until cake tests done.
Cool before inverting. Sprinkle with sifted sugar.
* Or 2 cups all-purpose flour plus 1 teaspoon salt and 2 teaspoons baking powder
