Title: Spicy Zucchini Bars

1 1/4 | c | Brown Sugar; packed |
1/2 | c | Margarine or Butter softened |
2 | Eggs | |
1 | ts | Vanilla |
2 | c | Whole Wheat Flour |
2 | ts | Baking Soda |
3/4 | ts | Ground Cinnamon |
1/2 | ts | Ground Nutmeg |
1/4 | ts | Ground Cloves |
1 1/2 | c | Shredded Zucchini |
1 | c | Golden Raisins |
CREAM CHEESE FROSTING | ||
1 | pk | Cream Cheese (3 oz) softened |
1/4 | c | Margarine or Butter softened PLUS |
2 | tb | Margarine or Butter softened |
1 | ts | Vanilla |
2 | c | Powdered Sugar |
Heat oven to 350F. Grease rectangular pan, 13x9x2 inches. Mix brown sugar, margarine, eggs and vanilla in large bowl. Stir in flour, baking soda, cinnamon, nutmeg and cloves. Stir in zucchini and raisins. Spread in pan. Bake 25 to 35 minutes or until toothpick inserted in center comes out clean; cool. Frost with cream cheese frosting. Cut into 2x1 1/2 inch bars. Refrigerate any remaining bars.
Cream Cheese Filling: Mix cream cheese, margarine and vanilla. Gradually beat in sugar until smooth and spreading consistency.
High Altitude Directions (3500 to 6500 feet): Heat oven to 375F. Decrease brown sugar to 1 cup and baking soda to 1 teaspoon. Bake 25 to 30 minutes.
