Title: Standard Chutney Recipe

Yield: 4 Servings
5 | c | Seedless raisins; chopped |
6 | c | Green apples; chopped - or |
Pears | ||
2 2/3 | c | Onions; minced |
2/3 | c | Salt |
5 | lb | Red tomatoes; peeled and |
Diced | ||
3 | lb | Brown sugar |
2 1/2 | pt | Cider vinegar |
1/4 | lb | Ginger; minced |
1/2 | lb | White mustard seed |
Cayenne pepper to taste |
Cook all together slowly in a gigantic kettle (or in batches) for 3 hr until thick. Put up in jars in the standard way, using a hot water bath. :makes 1 gallon or so
