Title: Strawberries in Red Wine

750 | g | Strawberries |
100 | g | Granulated sugar |
300 | ml | Red wine (not too tannic) |
10 | Cm length orange zest | |
5 | Cm length cinnimon -=OR=- | |
1 | ts | Ground cinnamon |
In a saucepan, bring the wine, sugar, orange zest and cinnamon to the boil. Turn down and simmer 4 minutes or so. Allow to cool (this may be done the day beforehand). While syrup is cooling, wash (if essential), hull and quarter the strawberries into a serving dish. Pour the cold syrup over and macerate at least 6 hours before serving. Note. Strawberries in red wine can be kept up to three days in the refrigerator. [IMH suggests two modifications. Use ros‚ wine instead of red, if you can get a decent dry ros‚. Also, try substituting an anise hint for the cinnamon, by substituting star anise during the simmering and removing straight away afterwards, and then by adding a little pastis (TASTE) at the last minute.
