4 | Egg Whites | |
1 | c | Castor Sugar |
1 | ts | Vanilla Essence |
1 | l | Vanilla Ice-Cream |
2 | ts | Vanilla Essence |
1/2 | c | Hazelnuts, roasted & chopped |
1/2 | c | Whipped Cream |
Prepared Chocolate Sauce |
Beat egg white until stiff. Gradually add sugar, beating until all sugar is added & the mixture is smooth, stiff & glossy. Beat in first measure of vanilla. Make circles about 7cm in diameter on a pieces of baking paper. Place paper marked side down on a baking tray. Spread two tablespoons of mixture on baking paper in circles. Bake at 150C (300F)for 40 minutes or until meringues are crisp & dry. Soften ice-cream & divide in half. Mix second measure of vanilla into one half & the hazelnuts into the other. Freeze until firm. To serve, place a meringue round on a plate. Top with a scoop of vanilla ice-cream, another meringue round, a scoop of hazelnut ice-cream & another meringue round. Pour chocolate sauce & whipped cream over.
