Title: Toffee Diamonds

1 3/4 | c | All-purpose flour |
1 | c | Sugar |
1 | c | (2 sticks) I Can't Believe It's Not Butter! spread, unsalted |
1 | ts | Vanilla |
1 | lg | Egg; separated |
1/2 | c | Walnuts; finely chopped |
Preheat oven to 275ø. Grease 15 1/2" x 10 1/2" jelly-roll pan. Into large bowl, measure flour, sugar, I Can't Believe It's Not Butter!, vanilla, and egg yolk. Mix at low speed until blended. Increase speed to medium heat until well mixed.
Pat dough evenly onto jelly-roll pan. In cup, with fork, beat egg white lightly; with pastry brush, brush over top of dough. Sprinkle with walnuts.
Bake 1 hour and 10 minutes or until golden.
Cut diagonally immediately after baking. Remove from pan. Cool on wire rack. Makes 4 dozen.
