Title: Triple Good Bars

2 | c | Raisins |
1 | tb | Grated lemon peel |
1 | c | Butter or margarine |
1 1/2 | ts | Vanilla |
1 | c | Flour |
1/2 | ts | Baking soda |
1 | cn | Condensed milk(14oz) |
1 | tb | Lemon juice |
1 1/3 | c | Brown sugar, packed |
2 1/2 | c | Oats, uncooked |
1 1/2 | c | Walnuts, chopped |
1/4 | ts | Salt(optional) |
Heat oven to 375 degrees. Grease a 13 x 9 inch baking pan. In a medium saucepan, combine raisins, milk, lemon peel and lemon juice. Cook over medium heat, stirring constantly, just until mixture begins to bubble. Remove from heat; cool slightly; set aside. Beat butter or margarine, sugar and vanilla until fluffy. Add remaining ingredients; blend until evenly mixed and crumbly. Reserve 2 cups. Press remaining mixture onto bottom of greased pan. Spread raisin mixture to within 1/2 inch of pan. Sprinkle with remaining oat mixture; pat lightly. Bake 25 to 30 minutes or until golden brown. Cool completely. Cut into 1 x 2 inch bars. Makes about 4 dozen. - Mark Milkas 6 Mar 95
