Title: Turos Palacsinta (Stuffed Pancakes)

150 | g | Cottage cheese |
120 | g | Caster sugar (or more) |
30 | g | Raisins |
2 | Eggs | |
Icing sugar | ||
1 | ts | Vanilla extract |
1/2 | ts | Lemon rind, grated |
The night before, place cottage cheese in a muslin bag and hang up, in order to allow excess whey to escape.
Beat the caster sugar with the egg yolks, and mix in the drained cottage cheese. Add raisins, some vanilla extract and grated lemon rind to taste.
Shortly before serving, set oven to 375F (Reg 5), whisk egg whites, and fold them into the cheese/egg mixture. Fill the pancakes, (folding in the ends and rolling to enclose the mixture completely) and put them into an ovenproof dish.
Bake the pancakes about 15 minutes until puffed and heated through. Remove from oven and dust wuth icing sugar. Serve at once.
