Title: Vandermint Mousse

Yield: 8 Servings
6 | oz | Package semi-sweet chocolate morsels |
1/2 | c | Hot (but not boiling) Vandermint liqueur |
1 | c | Butter, cut in pieces |
4 | Egg yolks | |
4 | Egg whites; beaten until stiff | |
2 | tb | Powdered sugar |
1/2 | pt | Heavy cream; whipped |
Vanilla | ||
Sugar | ||
Bittersweet chocolate; shaved |
Combine in blender first 2 ingredients. Add second 2 ingredients. Beat egg whites until stiff. Add powdered sugar. Fold in Vandermint mixture. Pour into souffle dish, or individual souffle dishes and chill until firm. To serve, cover with whipped cream which has been sweetened and flavored with vanilla. Top with grated bittersweet chocolate.
