Title: Vinegar Cake

Yield: 4 Servings
1 | lb | Flour (sifted) |
1/2 | lb | Butter |
1/2 | lb | Sugar |
1/2 | lb | Currants |
1/2 | lb | Sultanas |
2 | ts | Baking soda |
1 | c | Milk |
1 | Egg | |
2 | tb | Malt vinegar |
Few drops each of vanilla, | ||
Orange and lemon essences |
Cream butter and sugar, add egg, then flour and fruit. Dissolve baking soda in milk, add to fruit mixture. Add essences, and lastly vinegar. Make a good slushy mixture. Grease and line a large cake tin and turn mixture into it. Bake in oven at 300F for about 2 hours. If it starts splitting turn oven down a bit.
This has to be my favourite fruit cake. It's so yummy.
