Title: War Cake
Categories: Cake Dessert
Yield: 1 Cake
2 | c | Brown sugar |
2 | c | Hot water |
2 | ts | Lard |
8 | oz | Raisins |
1 | ts | Salt |
1 | ts | Cinnamon |
1 | ts | Cloves |
3 | c | Flour |
1 | ts | Soda |
Combine all ingredients EXCEPT flour and soda in a saucepan. Boil them for five minutes after they begin to bubble, then allow to cool.
When cold, add flour and soda which have been sifted together.
Bake in two loaves - 45 minutes in a slow oven.
This cake improves by keeping. During the war (WWI) this recipe was not given away, but sold for ten cents to benefit the Red Cross.
Dave's note: This is called a "War Cake" because it uses no eggs, butter, or milk (which, due to rationing, were in short supply.) My grandmother told me how she used to bake these during WWII. Apparently, the recipe is older than I had thought.
