COOKIES | ||
2 | c | All purpose flour |
1 | ts | Baking soda |
1/4 | ts | Salt |
1/3 | c | Unsweetened cocoa |
1 | c | Granulated sugar |
1 | Egg | |
1/3 | c | Vegetable oil |
1 | ts | Vanilla extract |
3/4 | c | Milk |
FILLING ONE | ||
1/2 | c | Butter or margarine |
1 | c | Powdered sugar |
3 | tb | Marshmallow creme (heaping) |
1 | ts | Vanilla extract |
FILLING TWO | ||
1/2 | c | Vegetable shortening |
1/2 | c | Granulated sugar |
1 | pn | Salt |
5 | tb | (To 6) all purpose flour |
2 | ts | Vanilla extract |
1/2 | c | Milk |
3 | tb | (To 4) marshmallow creme |
FILLING THREE | ||
1/3 | c | Evaporated milk |
2/3 | c | Vegetable shortening |
3/4 | c | Granulated sugar |
1 | ts | Vanilla extract |
1 | pn | Salt |
Preheat oven to 350 degrees F.
COOKIES: Mix together flour, baking soda, salt, cocoa and sugar; then add egg, oil, vanilla and milk. Beat together. Drop by teaspoons onto greased cookie sheet. (They will spread) Bake 8 to 10 minutes. When cool, fill with one of the three fillings.
FILLING ONE: Mix together butter, powdered sugar, marshmallow creme and vanilla. Use to sandwich 2 cookies together.
FILLING TWO: Beat together shortening, sugar, salt, flour, vanilla and milk 5 to 10 minutes. Add marshmallow creme. Use to sandwich 2 cookies together.
FILLING THREE: Put evaporated milk, shortening, sugar, vanilla and salt in bowl and let stand 30 minutes. Then beat until thick and creamy. Use to sandwich 2 cookies together.
Flavoring other than vanilla could be used in any of the fillings. Cookies could also be frosted with a thin chocolate coating if desired.
