Title: Zuk Cakes or "Egg-Foo-Zuk"

Yield: 4 Servings
1 | md | Zucchini |
3 | Eggs | |
1/2 | c | Cornmeal |
1/2 | ts | Salt |
2 | tb | Butter or margarine |
Grate zucchini in medium bowl. Add eggs and stir with fork until blended. Add cornmeal and salt and blend. Spoon into melted butter in skillet. Shape into pancake with fork. Turn with spatula. Cook until golden. Serve with yogurt and fruit or syrup topping.
Good as breakfast, lunch or dinner (even snacks).
