Title: Lumberjack Cake

Yield: 1 8" pan
2 | Apples, peeled and finely chopped | |
1 | c | Chopped dates or raisins or sultanas |
1 | ts | Bicarbonate of soda |
1 | c | Boiling water |
4 | oz | Butter or marg. |
1 | c | Sugar |
1 | Egg | |
1 | ts | Vanilla |
1 1/2 | c | Flour |
TOPPING | ||
2 | oz | Butter |
1/2 | c | Brown sugar, firmly packed |
1 | tb | (To-2) milk |
1/2 | c | Shredded coconut |
Combine apples, dates, soda and water. Allow to cool to lukewarm.
Line and grease 20cm (8") deep cake tin. Heat oven to 180C (350F).
Cream butter and sugar until light and fluffy, add egg and vanilla and beat well.
Sift flour and beat in alternately with apple mixture.
Pour mixture into tin and bake for approximately 1 hour or until cooked.
Make topping by combining butter, brown sugar, milk and coconut in saucepan. Stir over low heat until melted.
Spread over hot cake and return to oven for a further 20 mins. or until topping is golden brown.
