Title: Diabetic Coconut Fruit Cookies

1 1/2cFlour
1tsBaking powder
1/4tsBaking soda
1/4tsSalt
1/3cDiet margarine
1/3cFlaked coconut
1 Egg
1/2cUnsweetened fruit juice
2tsOrange or lemon peel --
  Grated
  Sugar Substitute Equal to
1/3cSugar

Preheat oven to 400 degrees. Combine flour, baking powder, baking soda, and salt, cut in margarine until consistency of peas. Stir in coconut add remaining ingredients all at once. Stir with fork until dough holds together. Drop about 2 inches apart by teaspoons onto an ungreased cookie sheet. Bake until light golden brown (about 10 minutes). Yield: 3 dozen.
