Title: Scampi Mare Nostrum

24 | lg | Prawns peeled, deveined, and split lengthwise |
Salt & pepper | ||
1/2 | c | Olive oil |
1/2 | c | White wine |
Juice of one lemon | ||
1/2 | c | Fish stock |
2 | lg | Shallots chopped |
2 | tb | Chopped sweet basil |
2 | tb | Chopped fresh oregano |
Arrange the prawns butterfly fashion in a baking dish. Season with slat and pepper. combine oil, wine, lemon juice, fish stock, shallots, basil and oregano. Poru over prawns, turning to coat well. Marinate for 1 hour. When ready to cook, remove prawns from marinade, shaking off excess. Place under broiler and broil for 10 min. or until golden. DO NOT OVER COOK.
