1/4cButter Or Regular Margarine
1/4cUnbleached Flour
2 1/2cMilk
1tsSalt
1dsPepper
1 1/2cCheddar; Sharp, Shredded
1/4cParmesan Cheese; Grated
1lbFish Fillets; Cooked, Flaked
2 1/2ozMushrooms; Drained, 1 Cn/Jar
1/4cPimento; Chopped
  Rice; Hot, Cooked

Make a white sauce with the butter, milk, flour and seasonings. Add the cheeses and stir until they are melted. Stir in the flaked fish, mushrooms and pimento and heat through. Serve over the hot rice and garnish with parsley, if desired.
