1 1/2 | lb | Small to medium size shrimp, frozen; thawed |
16 | oz | Linguini |
6 | oz | Snow peas, frozen; thawed |
| | Or a handful of fresh; blanched |
6 | | Green onions; chopped |
4 | md | Tomatoes; peeled, chopped, and |
| | Drained |
3/4 | c | Olive oil |
1/4 | c | Fresh parsley; chopped |
1/3 | c | Wine vinegar |
1 | ts | Oregano |
1/2 | ts | Basil |
1/2 | ts | Garlic salt |
1/2 | ts | Black pepper; coarsley ground |
Cook linguini according to package directions, omitting salt; drain. Rinse
with cold water and drain again. Combine shrimp, linguini, and remaining
ingredients; toss gently. Cover and chill at least 2 hours. NOTES
: If using fresh shrimp use 1 1/2 pounds umpeeled medium size
shrimp. Bring 5 cups water to boil; add shrimp and cook 3 to
5 minutes. Drain well; rinse with cold water. Chill. Peel and
de-vein shrimp.
