Title: Apple Dessert Latkes

Yield: 4 Servings

2 Eggs -- separated
1/2cMilk or liquid non-dairy
  Creamer
1cAll-purpose flour
1tbGranulated sugar
1tbMelted unsalted butter or
  Margarine
1tbLemon juice
  Salt
  Oil
3 Or 4 apples, peeled -- cored
  And thinly sli
  Powdered sugar
  Cinnamon
  Caramelized Applesauce (see
  Recipe)

In large mixing bowl, beat egg yolks until light. Blend in milk then stir in flour, sugar, butter and lemon juice. Add salt to taste. Beat until smooth. Beat egg whites until stiff peaks form and fold into egg yolk mixture.

In large, heavy skillet, heat 1/4 inch oil to about 375 degrees. Dip each apple slice into batter.

Lift out with fork and fry in oil until browned on both sides, about 2 to 3 minutes per side.

Drain on paper towels. Just before serving, sprinkle with powdered sugar and cinnamon. Serve with Caramelized Applesauce.
