Preheat oven to 350 degrees. Grease an 8" square pan.
Beat sugar, oil, eggs and vanilla in a large bowl. Mix in bananas and pecans. Add flour, stir until just mixed. Pour into prepared pan. Bake for 35 to 40 minutes or until golden brown. Cool completely on wire rack. Makes 6 to 8 servings.
For Fresh Apple Cake: Substitute 2 cups of grated cored apples with peel on. for bananas, add 1 teaspoon cinnamon, 1/2 teaspoon nutmeg and 1/4 teaspoon cloves to flour.
For Carrot Cake: Substitute 2 cups shredded peeled carrots for bananas. Add 1 teaspoon cinnamon to flour.
