Title: Coconut Snack Cake

2 | c | Sifted flour |
1 | ts | Baking soda |
1 | ts | Ground cinnamon |
1/2 | ts | Salt |
2/3 | c | Shortening |
1 | c | Packed brown sugar |
2 | Eggs | |
1 | ts | Vanilla |
1 | c | Buttermilk |
1 | c | Flaked coconut |
1 | c | Sugar |
1 | ts | Ground cinnamon |
1/2 | ts | Ground nutmeg |
1/4 | c | Light cream |
Sift together flour, baking soda, cinnamon and salt.
Cream together shortening and brown sugar until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla.
Add dry ingredients alternately with buttermilk, beating well after reach addition. Spread in greased 13x9x2 inch cake pan.
Combine coconut, sugar, cinnamon, nutmeg and light cream. Sprinkle over top of batter.
Bake in 350 degree oven 35 minutes or until toothpick inserted in center comes out clean. Cool in pan on rack. Makes 16 servings.
