Title: Spicy Butterscotch Snack Cake

1cButter -- softened
1cGranulated sugar
2 Eggs
1/2tsVanilla extract
1/2cApplesauce
2 1/2cAll-purpose flour
1tsBaking soda
1 2 tsp. ground cinnamon
1/2tsSalt
1 2/3cButterscotch chips (10 oz.)
1cChopped pecans (optional)
  Powdered sugar (optional)

Heat oven to 350 degrees. Lightly grease 13x9x2-inch baking pan. In large mixer bowl, beat butter and sugar until well blended. Add eggs and vanilla; blend thoroughly. Mix in applesauce.

In small bowl stir together flour, baking soda, cinnamon and salt. Gradually add to butter mixture, mixing well. Stir in butterscotch chips and pecans, if desired. Spread in prepared pan. Bake 35-40 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Sprinkle with powdered sugar, if desired. Yield: about 12 servings.
