Title: Sunbeam Applesauce Cake

2 | c | Sifted flour |
2 | tb | Cocoa |
1 | ts | Salt |
1 | ts | Cinnamon |
1 | ts | Pumpkin pie spice |
1/2 | ts | Soda |
1 1/2 | ts | Double acting baking powder |
1/2 | c | Soft shortening |
1 1/2 | c | Granulated sugar |
2 | Eggs | |
1 1/2 | c | Canned applesauce |
1/2 | c | Raisins |
3/4 | c | Cut up, pitted dates |
2/3 | c | Chopped walnuts (opt) |
Cover frypan, close vent. Preheat to 280 degrees F. When preheated, grease well, using a pastry brush. Sprinkle lightly with flour, brushing the flour and shortening mixture over surface.
Sift together dry ingredients; toss 2 tablespoons with fruit and nuts.
Cream shortening and sugar in large electric mixer bowl on medium speed for 2 minutes. Add eggs one at a time while beating 2 minutes longer. Add flour mixture alternately with applesauce while beating on low speed. Scrape bowl when necessary and beat only until blended. Beat in fruit and nut mixture.
Add batter to prepared frypan, cover, bake until top of cake is no longer moist -- about 45 minutes. Open vent last 5 minutes of baking time. Loosen well around edges with a spatula. Invert on cake cooler rack. let stand a few minutes before lifting off frypan. Cool. Frost with caramel or orange cheese frosting.
