Title: Spinach Puree

Yield: 1 Servings
1 | lb | Fresh spinach, cleaned |
1/4 | c | Water |
1/2 | ts | Salt |
1 | md | Garlic clove, minced |
1 | Black pepper to taste |
Cook the spinach without added water in a covered pot fro just a few minutes - until tender & very bright green.
Transfer to a blender & with 1/4 cup water, puree till very smooth. Place in a small bowl. Thin to desired consistency & season with garlic, salt & pepper. Serve on cold pasta or on hot baked potatoes.
