4 | | Boneless, skinless chicken breast halves |
1 | tb | Plus 1 ts margarine |
1 | cl | Garlic, crushed |
1 1/2 | oz | Cornflake crumbs |
3 | tb | Grated Parmesan cheese |
1/2 | ts | Ground black pepper |
Preheat oven to 400. In a small skillet over medium heat, add margarine and
garlic; cook until the margarine melts and the garlic is fragrant. Put
cornflake crumbs, cheese, and pepper in a plastic bag. Lightly dip the
chicken breasts into the margarine, then the the cornflake mixture. Place
the chicken in a nonstick baking pan and bake for 35 to 40 minutes or until
the coating is golden brown and crispy and the chicken is cooked through.
