Title: Mild Fish Pickle

3ozTuna, salmon or anchovy
2tsWhite wine
1tbVinegar
1/2tsMustard seed
1/2tsOregano
1/2tsCelery seed (or lovage)
1tbOlive oil
1/2tsHoney
1pnBasil
1/4tsThyme
1 Mint leaf, finely chopped

In a mixing bowl, thoroughly combine all ingredients. This fish pickle may be stored in the refrigertator in a glass jar for up tp 2 weeks, and should then be replaced.
