Title: Zippy Fried Egg Sandwich

2 | sl | White bread; toasted |
1 | Or 2 eggs; fried, seasoned and fried any style | |
A little butter; for frying | ||
1 | tb | Cheese Whiz (TM) |
1 | ts | Butter; optional |
1 | tb | Canned salsa |
Lately, I've only been eating breakfast on the weekends and I am eating eggs less frequently. This my favourite light quick breakfast of late.
Season the eggs with your choice of salt, pepper, cayenne, Everglades (TM) [my current favourite] and/or mixed Italian herbs. Fry the egg[s] sunny side up, over easy or lightly scambled. Or for less fat, poach them. I often run the skillet under the broiler/grill to finish the top side of a sunny side up egg. [Watch out that you position the pan in the oven so as not to burn the handle if your fry pans have wooden handles like mine do.]
In the meantime, toast up the bread. Spread one slice with Cheese Whiz [this is about the only thing in which I actually prefer processed cheese spread to real cheese] and the other slice with [butter is optional] canned or jarred cooked salsa [way more flavourful than ketchup].
Time the eggs and toast so that they are ready at the same time. Assemble while very hot so that the cheese spread melts and eat immediately while very hot.
