Title: Basque Potatoes

1/2cFinely chopped onion
1/2cChopped Italien parsley
1/2cShredded carrot
2 Cloves garlic, minced
2tbSpanish olive oil
1 1/2cChicken broth
20 1/2cCubed potatoes
  Approximately 1"
  Salt and pepper to taste

In skillet cook onion, parsley, carrot, and garlic in olive oil until vegetables are tender. Add broth, potatoes, salt, and pepper to taste.Cover and simmer for 10 minutes. Uncover and simmer, stirring occasionally, for 20 minutes.Garnish with additional parsley, if desired.
