Title: Salmon in a Vibrant Sauce

Yield: 4 Servings

1/4cFresh cilantro -- chopped
3tbFresh ginger root -- peeled
  And chopped
2tbGarlic -- chopped
2 Jalapeno peppers -- seeded
  And chopped
3tbLime juice
1tbCanola oil
1/2tsSalt
1/4tsGround turmeric
1 1/4lbSalmon fillet -- cut into
2 X2 inch
2cWhite rice -- cooked
  Pieces

Using a food processor, grind together cilantro, ginger, garlic and jalapeno until blended to a paste-like consistency. Add lime juice, oil, salt and turmeric. Transfer to a shallow glass dish, add fish pieces and turn in the marinade, making sure each piece is coated. Cover and marinate 5 to 10 minutes.

Put the fish and marinade into a large nonstick skillet. Cover with a tight fitting lid and place over medium-low heat. Cook gently about 12 minutes per inch of thickness, until cooked through. Serve with rice.
