Title: Broiled Maine Salmon with Mustard Glaze Maine Dept. of Ag

Yield: 4 Servings

1 1/4lbThick filet of Maine salmon
4tbUnsalted butter, melted
1clGarlic, minced
3tbBrown sugar
1tsPrepared mustard
  Few drops liquid smoke
  (optional)

Wash the filet, pat dry with paper towel. Place skin side down on lightly oiled broiling pan. Preheat broiler.

Mix enough mustard into the brown sugar to be spreadable and smooth. Cover the salmon with the sauce, lightly brush with the melted butter-garlic mixture. Broil about 6" from the heat for 10 min per inch of thickness until it flakes easily at the thickest part and shows no trace of dark raw fish. Cut into chunks about 1 1/2" x 1 1/2" square.
