Title: Spicy Poached Apples - Sl 6/90 (Microwave)

4 | lg | Cooking apples |
1 | Orange; quartered | |
1 | c | Cranberry juice cocktail |
1/4 | c | Sugar |
2 | 3-inch sticks cinnamon | |
8 | Whole cloves |
Cut a 1/4-inch slice from the bottom of each apple. Peel apples, leaving a 1-inch border of peel at stem end. Core apples just from the bottom, cutting into, but not through, the stem end. Set aside. Combine orange quarters and remaining ingredients in a shallow 2-quart casserole dish; stir well. Place apples in juice mixture. Cover tightly with heavy-duty plastic wrap; fold back a small edge to allow steam to escape. Microwave at HIGH 3 minutes. Uncover and turn apples over; cover and microwave at HIGH an additional 4-1/2 to 5 minutes or unti lapples are tender but still hold their shape. Turn apples again; let cool in liquid. Place apples in individual serving dishes; spoon liquid over each. Yield: 4 servings.
