Title: Beet Soup

1 | Bunch of beets, | |
Peeled, halved, sliced | ||
1 | Beet greens, | |
Washed and finely chopped | ||
3 | Stalks celery, diced | |
1 | tb | Lemon juice |
Salt & pepper to taste | ||
1 | Lg onion, diced | |
4 | Carrots, sliced | |
1 | tb | Vinegar |
1 | tb | Horseradish |
1 | cn | Tomato soup |
Put vegetables in a large pot with water to cover. Add remaining ingredients and mix thoroughly. Simmer 2 - 2 1/2 hours, until beets and carrots are tender. Source: my Lithuanian mother-in-law
