Title: Black Bean and Rice Salad

2 | c | Cooked or canned black beans - (rinse & drained canned) |
2 | c | Cooked rice |
1 1/2 | c | Fresh cilantro |
1/4 | c | Lime juice |
3/4 | c | Oil |
1/2 | c | Chopped onion |
2 | Garlic cloves; crushed | |
Salt | ||
Freshly ground black pepper |
Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Add salt and pepper to taste.
