Title: Marchand De Vin Sauce

Yield: 2 Cups

3/4cButter
1/3cFresh mushrooms (finely
  Chopped)
1/2cHam, minced
1/3cShallots, finely chopped
1/2cOnions, finely chopped
2tbGarlic, minced
2tbFlour, all-purpose
1/2tsSalt
1/8tsBlack pepper
  Dash cayenne pepper
3/4cBeef stock
1/2cRed wine

Melt butter in a 9-inch skillet; add mushrooms, ham, shallots, onion, and garlic. Saute until lightly browned. Add flour, salt, pepper, and cayenne; cook until browned. Blend in beef stock and wine and simmer over low heat for 35 to 45 minutes.
