Title: Beefless Hash

2 | c | Potatoes |
2 | tb | Margarine; nondairy |
1 | lg | Onion; chopped |
2 | ts | Herbs; mixed |
1 | tb | Vegetable extract |
4 1/2 | oz | Tvp chunks |
1 1/4 | c | Vegetable stock or water |
2 | tb | Tomato paste |
Salt; pepper to taste |
Peel and dice the potatoes, and parboil them for one minute, then drain. Melt the margarine in a frying pan and saute the onion and garlic. Then add the herbs.
Add the diced potato and saute for 2-3 minutes. Now add the vegetable extract and TVP chunks and stir for 2-3 minutes over a low heat.
Stir in the vegetable stock, tomato paste and seasoning. Cover and simmer over a low heat for 15 minutes, adding a little extra stock or water if necessary to make a thick sauce.
