Title: Thai Black Japonica Salad

Yield: 6 Servings
1 1/2 | c | Lundberg black japonica uncooked |
1/2 | c | Each: |
Bell pepper, green; diced | ||
Bell pepper, red; diced | ||
1/2 | c | Carrots; grated |
1/2 | c | Celery; chopped |
1/2 | c | Onion, green; chopped |
1 | tb | Sesame oil |
2 | tb | Canola oil |
2 | tb | Tamari |
1/4 | c | Rice vinegar |
1/4 | c | Lundberg sweet dreams brown rice syrup |
1 | ts | Garlic granules |
1 | ts | Red pepepr, dried; crushed |
1/4 | c | Cashews; toasted; chopped |
Cook rice acording to package instructions and set aside to cool. Mix togetheroils, tamari, vinegar, rice syrup, garlic and peppers. Toss mixture with rice, vegetables and cashews. Chill and serve. Yield: 6-8 servings.
