Title: Leeky Scallops

4 | tb | Butter, room temp |
1 | tb | Fresh thyme or 1.5 dry |
2 | Leeks, chopped julianne | |
2 | Carrots, chopped julianne | |
1 | lb | Bay scallops |
3 | tb | Fresh basil |
1 | Lemon chopped to quarters |
Mash chopped thyme, with salt and pepper to taste, into the butter. Now blanch the leeks and carrots and set aside. Lay equal amounts of leeks and carrots on 4 foil linings and add scallops. Add lemon juice and the butter evenly about the 4 sets. You can bake these in a preheated oven at 450 degrees for 15 mins, or grill the foil packages.
Goes lovely with grilled whole corn, still in the husk and some baking soda type breads of cheese and herb type. For dessert, consider slices of fresh grapefruit.
