16 | oz | Package large cheese ravioli |
1 | sm | Oinion, thinly sliced |
1/2 | | Yellow bell pepper, chopped |
1/2 | | Orange bell pepper, chopped |
1 | lg | Tomato, chopped |
1/2 | c | Basil olive oil |
1/4 | c | Seasoned rice wine vinegar |
1/2 | c | Freshly grated Parmesan cheese |
1 | tb | Minced fresh basil leaves |
2 | ts | Fresh oregano leaves |
1/2 | ts | Crushed fresh thyme leaves |
| | Salt and pepper to taste |
Prepare ravioli according to package directions. Chill in refrigerator
about 1 hour. In a large salad bowl, combine ravioli, onion, bell peppers,
tomaot, oil and vinegar, Parmesan, basil, oregano and thyme. Toss lightly.
Add salt and pepper. For best flavor, prepare a day in advance and
refrigerate.
