IN A LARGE BOWL, MIX |

1/2 | c | Sugar |
1/2 | c | Oil |
1/2 | c | Milk |
| | Grated zest of 1 lemon |
| | Grated zest of 1 orange |
| | Fresh juice of one lemon and |
| | One orange (should measure |
| | 1/2 cup, combined) |
IN A SMALL BOWL, COMBINE |
1 1/4 | c | Flour |
1 | c | Whole wheat flour |
1 | tb | Baking powder |
1/2 | ts | Baking soda |
1/2 | ts | Salt |
Pour the wet ingredients into the dry ingredients and stir until just
moistened. Spoon into a medium muffin pan (greased) and bake in a 400F
oven for about 20 minutes. Remove from pan and allow to cool.
