3/4lbBoneless beef chuck roast
1tsSalad oil
1/2tsSalt
 dsBlack pepper
3/4cWater
2 Carrots, paired and halved
1smOnion, peeled and quartered
2mdPotatos, pared and quartered

In heavy skillet, brown meat slowly in oil then season with salt and pepper. Add water and simmer covered for 1 hour. Add rest of veggies and simmer another hour, adding water if needed.
