Title: Angel Hair Pasta with Smoked Salmon in Tomato-Herb Sauce

6 | oz | Thinly sliced smoked salmon |
3 | tb | Olive oil |
1 | lg | Clove garlic, minced |
2 1/4 | c | Fresh tomatoes, seeded and chopped, divided |
1/2 | c | Dry white wine |
3 | tb | Large capers, drained and rinsed |
1 1/2 | ts | Dill weed |
1 1/2 | ts | Dried basil |
8 | oz | Angel hair pasta |
1/2 | c | Grated parmesan cheese |

Cut smoked salmon, with the grain, into 1/2" wide strips. Reserve.
In a large skillet over medium-high heat, heat olive oil. Add garlic. Cook about 1 minute, stirring until golden. Add 2 c tomatoes, wine, capers, dill weed and basil. Stir and cook until mixture is hot.
Meanwhile, cook pasta according to package directions. Drain pasta. Place in large serving bowl. Toss with tomato mixture. Add salmon and cheese. Toss gently. Garnish with remaining tomatoes and parsley.
