Title: Couscous with Peas and Onion

Yield: 4 Servings
1 1/2 | c | Finely chopped onions |
1 | tb | Olive oil |
1 | c | Fresh or frozen green peas |
1 1/2 | ts | Chopped fresh sage |
1/2 | ts | Salt |
1 1/3 | c | ;water |
1 | c | Whole-wheat couscous |
;salt to taste | ||
Few fresh sage leaves | ||
Lemon wedges or balsamic vinegar |
Combine onions and oil in heavy skillet, preferably nonstick. Cover and saute, stirring occasionally, for 10 - 15 minutes, until lightly browned. Add peas, sage, salt, water and couscous. Cover and cook on low heat for about 5 minutes, until pease are tender but still bright green and all the water is absorbed. Fluff couscous with a fork. Salt to taste.
Garnish with a few sage leaves and serve with lemon wedges, or pass a bruet of balsamic vinegar.
