Title: Spiced Apple Rings

1 7/8 | qt | Sugar |
2 1/8 | c | Cider vinegar |
1 1/4 | ts | Red food coloring |
5 | Whole cinnamon sticks | |
2 1/2 | ts | Cloves; whole |
5 | lb | Firm apples; peeled, peeled |
; and cored |
Prepare 4 pint canning jars. Place sugar in a 5-qt pot along with vinegar, food color, cinnamon, and cloves. Bring mixture to a boil, uncovered; Reduce heat and simmer for 10 minutes. Slice apples crosswise into 1/3 inch-thick rings. Add the rings to the simmering syrup and cook, turning rings occasionally, for 6 - 8 minutes or til apples are barely tender and just becoming translucent around the edges. Fill jars to within 1/2 inch of rim. Wipe rim and place lid and ring band as tightly as possible. Set jars on a folded towel away from drafts; let cool. Leave ring bands on until jars are cool. Makes 4 pints.
