Title: Garden Chicken Hoagie

4 | Hoagie rolls, split | |
3 | tb | Garlic-flavored oil, divided |
2 | sm | Zucchini, scrubbed and thinly sliced |
1 | sm | Onion, thinly sliced |
1 | ts | Dried Italian seasoning |
Salt and pepper to taste | ||
2 | To 3 tb mayonnaise | |
4 | sl | Chicken breast meat |
2 | sm | Tomatoes, sliced |
4 | sl | Provolone cheese |
Preheat broiler. Brush cut sides of rolls with 1 1/2 tb of the oil. Toast lightly and set aside.
In a medium mixing bowl, toss zucchini and onions with remaining 2 tb oil and seasonings. In a small skillet, over medium-high heat, saute zucchini and onion for 3 to 5 minutes, until softened.
Spread mayonnaise on bottom halves of rolls. Spoon 1/4 of the zucchini mixture on each roll. Top each with a slice of chicken, 2 to 3 slices of tomatoes and a slice of provolone. Place under broiler until cheese melts. Place tops of rolls on sandwiches. Serve immediately.
