Title: Fruit Stand Chicken Salad

2 | c | Cubed cooked chicken |
1 | c | Chopped celery |
1 | c | Seedless grapes, halved |
4 | sm | Nectarines, diced |
1/2 | c | Mayonnaise |
2 | tb | Lemon juice |
2 | tb | Honey-Dijon nustard -OR- |
1 | tb | Dijon mustard and 1 tb honey |
1 | tb | Snipped fresh or frozen chives |
| | Salt and pepper to taste |
1 | | Head Bibb lettuce, washed and dried |
1/2 | c | Lightly toasted sliced almonds |
In a large mixing bowl, combine chicken, celery, grapes and nectarines. In
a small bowl, combine mayonnaise, lemon juice, mustard, chives and salt and
pepper. Add dressing to salad and toss lightly. Serve on lettuce leaves.
Sprinkle with toasted almonds.
